Green Split Peas are green peas that have had their outer husks removed. They have a mild earthy flavour which is perfect for all manner of soups, stews and casseroles. Puree them for a delicious Split Pea Soup, or throw a handful into your rice for added texture and flavour. Protein rich and containing a variety of nutrients, they do not need to be rehydrated overnight, but can be simply added during cooking.
Bring about 1.5 cups of water or broth to a boil for every cup of split peas. Add the peas, allow water to return to boiling, reduce heat, partially cover pan, and simmer for 30 to 45 minutes
