Bicarbonate Of Soda (also commonly known as baking soda or sodium bicarbonate), is a leavening agent used in batters and doughs to cause a foaming action to lighten and soften a mixture. An acid is required (common acids include vinegar, lemon juice, yoghurt and cream of tartar) to initiate the chemical reaction, releasing bubbles into the mixture.
Bicarbonate of soda is well known for it's odour absorbing properties, and can also be used as an alkaline ph cleaner to dissolve build up and deposits.
