Black rice, also known as forbidden rice, nerone rice or purple rice, is gaining popularity. This is thanks to its dramatic colour, uniquely nutty-sweet taste, and remarkable health benefits. Black rice is high in fibre, iron and vitamin E, and a good source of protein. Research has shown that one spoonful of black rice even contains more anthocyanin antioxidants than the equivalent amount of blueberries.
How to Prepare:
- Add 2 1/4 cup water or broth, and 1 cup rinsed black rice to a saucepan over medium-high heat and bring the water to a boil.
- Add salt, reduce heat, cover, and cook for about 30-35 minutes.
- Resist the urge to open the lid too often to check on the rice because this will let a lot of steam out.
- Continue cooking until the rice is tender and chewy, and all water is absorbed.
- Take off the heat and let it stand covered for about 5 to 10 minutes, then fluff with a fork and serve.
- Soak black rice ahead of time to speed up cooking time.
