Bicarbonate of Soda is used to rise un-yeasted items when the recipe contains large amounts of acidic ingredients such as yogurt, buttermilk, lemon juice, or vinegar.
Also bicarb is well known for it's odour absorbing properties, and can also be used as an alkaline ph cleaner to dissolve build up and deposits.
